Caramel Pecan Cookies

cookie has been made over with healthier ingredients!



2 Tablespoons Smart Balance® tub margarine, softened

2 Tablespoons unsalted butter, softened

1/3 cup Truvia® baking blend

½ cup brown sugar

1 large egg

½ teaspoon almond extract

½ teaspoon vanilla extract

¾ cup all-purpose flour

½ cup white whole wheat flour

½ teaspoon baking soda

¼ teaspoon salt

2 Tablespoons caramel bits, chopped

15 pecan halves



  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a medium bowl, using a hand mixer, beat margarine, butter, Truvia® and brown sugar until smooth.  Add egg and beat until combined.

  3. Add extracts, flours, baking soda and salt and mix well.

  4. Fold in caramel bits.  Use hands to knead dough and distribute caramel bits evenly. 

  5. Form into cookie shape and place on non-stick cookie sheet.  Bake for 15-20 minutes.  Let sit on cookie sheet 5 minutes before placing on letting cookies cool on wire rack.
