Open For Business: Eat and Evolve

A local mom makes meals for people who are too busy to make them themselves

PEORIA, IL - Most adults seem to lack the same thing: time. Like Jessica Gedraitis. a busy ER doctor.

"I love to cook, I just don't have the time to- to do it with my schedule." 

Well Gabriela Morin has a business to help with that, making healthy meals for those who are too busy to cook. 

"Most of our clients, we deliver right to their doorstep" said Gabriela Morin, Founder of Eat and Evolve. 

"If you really think about it, just grocery shopping, meal prep, meal planning, clean up, it's a lot of time out of your schedule. So having this healthy option and just having everything prepared for you it saves you a lot of time" said Abigael Morris, chef for Eat and Evolve. 

When Gabriela became a mother, she spent her spare time cooking for her friends, who loved her food.

"I've worked hard all my life, and after having my kids I thought 'I wanna lose the baby weight, I want to start practicing my cooking skills' I thought why don't I start cooking for my friends? So that's what I did" said Morin.

She decided to open a business of her own. From moms to millenials, she cooks for everyone.

"I love food, I love trying new things, so I try to put in my menu some asian meals, Italian, Latin American, in a healthy way" said Morin.

Gedraitis works "Days, PMs, nights, weekends, holidays."

Her busy schedule had her reaching for fast food as an easy option. 

"I recently studied for my re-certification boards and then I was constantly studying the entire summer so I would have had no time to prepare like she prepares and have that healthy of a meal" said Gedraitis.

Now she gets Gabriela's meals weekly.

"When I go to work and I heat up my meals in the microwave everybody's like 'What is that smell that smells so good, Oh I want to try that'" said Gedraitis.

So Gabriela cranks out about 1200 meals a month in a tiny kitchen, with a tiny staff. 

"I'm really passionate about it, this is what I like to do" said Morin.

 "I like the sort of we do a fast pace here, being just the two of us so, it's enjoyable we work well together so it's just fun sort of coming up with new recipe ideas" said Morris.

"It's a growing business, we're really excited to keep showing it around Peoria" said Morin.
