Tony Roma's, a steak and rib restaurant, is opening in the space connected to the chateau hotel and conference center.
The space had been empty for nearly two years, as company officials worked to gather money for the project. On Tuesday, it will open its doors for the first time, and city officials say it should see a lot of business right off the bat.
"Being the first in downstate Illinois and it's a wonderful draw for the market, and hopefully, we'll be able to attract others from Peoria and other areas to come over and enjoy a high quality meal,” said Justine Robinson, economic development coordinator for the city of Bloomington.
Tony Roma's will have seating for 300, inside and out. Right now, staffing is at about 120 workers.
