1 small box of lemon instant pudding
1 small container of poppy seeds
1/2 C. oil
1 C. HOT water
Mix all ingredients together, except sugar, with a mixer for 4 minutes. Pour into two loaf pans that have been greased and floured. Sprinkle 1 T. sugar evenly over the top of each filled loaf pan. Bake for 45 minutes at 350 or until toothpick comes out clean. Cool completely. To store, wrap in tin foil.
