Cooking with Karissa: Sausage, Egg, and Cheese Breakfast Muffins

1 lb cooked crumbled sausage
1/2 c small diced onion (optional)
1 cup cheddar cheese
1 cup Biscuit mix
4 eggs slightly beaten

Preheat oven at 350 degrees
Spray 2 muffin pans (yields about 18)
Cook sausage and onion together, drain then set aside.
Combine all ingredients together just until combined, don't over mix. With a large cookie scoop or a 1/4 c measure scoop fill each muffin No more than 2/3 full and take a spoon and smooth top. Bake for 18 min. Don't over bake.
