Cooking with Karissa: Cornbread Stuffin' Muffins

Karissa is in the kitchen with a tasty new recipe.
5 cups cooked corn bread, cubed
7 strips of bacon, diced
1 Apple, diced
6 celery stalks, diced
Small onion, diced
2 cups chicken broth
3 tablespoons Poultry Seasoning
Salt and Pepper

Sautee' bacon until crispy. Remove bacon from pan and sautee' apples, celery, and onion in the drippings. In a mixing bowl, combine bacon, sautee' mixture, seasonings, cubed cornbread, and chicken stock. Mix until all is moist and well combined. Spray a muffin tin with non-stick cooking spray. Scoop a generous amount of stuffing mixture into each tin. Bake at 375 until tops and sides are crispy.
