Living Well Recipes: Apple, Spinach and Bacon Stuffed Chicken Breasts

A sweet and savory combination to enjoy all summer long!
Apple, Spinach, and Bacon Stuffed Chicken Breasts
Yields: 4 servings

- 4 each boneless skinless chicken breasts
- ¼ each granny smith apple, diced and placed in lemon water
- 4 oz bacon, diced
- 4 oz spinach
- 1 clove garlic
- Salt and pepper to taste
- Oil for sautéing

Saute bacon and garlic in sauté pan until bacon crisps. Add spinach and cook until wilted. Season with salt and pepper and refrigerate.
Cut a pocket in chicken breasts.
Drain lemon water from apples and mix with spinach and bacon.
Stuff mixture into chicken breasts.
Season chicken with salt and pepper and sauté in oil until done.
