Living Well Recipes: Bacon Breakfast Cupcakes

A portable version of your favorite weekend meal!
Bacon Breakfast Cupcakes
Yield 12 cupcakes

• 12 oz bacon, cooked and diced
• 2 tbsp chives, minced
• 4 cups prepared pancake batter
• 2 tsp vanilla extract
• 1 tsp ground cinnamon
• 8 oz mascarpone cheese
• ½ cup powered sugar
• 2 tbsp maple syrup

Divide diced bacon in half. Mix half of the bacon with the chives, vanilla, and cinnamon into the pancake batter.
Pour batter into well oiled muffin tins until ¾ full and bake at 350 for about 12 minutes or until toothpick come out clean when tested. Allow muffins to cool before removing.
Combine mascarpone, powdered sugar, and maple syrup to make icing.
Frost muffins with icing and top with remaining diced bacon.
