Living Well Recipes: Chicken with Mango Salsa

A festive and fresh recipe to celebrate this Cinco de Mayo!
Chicken with Mango Salsa
Yield: 4 portions

Ingredients
• 4 each boneless skinless chicken breasts
• 4 limes, juiced
• 4 garlic cloves, minced
• 1 tbsp salt
• ½ cup olive oil

Salsa
• 1 each mango, peeled and diced
• ½ onion, diced
• ¼ bunch cilantro chopped
• 1 lime, juiced
• 1 tsp salt
• 2 tbsp sugar

Directions
Combine lime juice, garlic, salt, and olive oil together. Marinate chicken up to 2 hours. Grill or sauté until chicken is cooked.
Combine salsa ingredients and stir well to combine.
Serve Mango Salsa over cooked chicken
