Living Well Recipes: Grilled Ribeye with Bacon Relish

A special treat to honor dad this Father's Day!
Grilled Rib-Eye Steaks with Dad’s Day Bacon Relish

Ingredients:
4 each 10 ounce Ribeye steaks
As desired Sea salt
As desired Freshly ground black pepper
¾ cup Blue cheese crumbles, (optional)
As Desired Dad’s Day Bacon Relish, (recipe follows)

Dad’s Day Bacon Relish:
1 pound Smoked bacon, rough chopped
1 cup Vidalia or other sweet onions, thinly sliced
1 cup Sweet red pepper, thinly sliced
1 tablespoon Chef Mark’s seasoning, (recipe follows)
¼ cup fresh parsley, chopped
3 tablespoons Brown sugar
1 tablespoon Fresh garlic, minced
1 tablespoon Balsamic vinegar

-In a large skillet over high heat sauté the bacon until it begins to brown.  Reduce the heat to medium and add the onions, peppers and garlic and continue cooking until they become soft.
-Add the brown sugar and Chef Mark’s spice blend. Continue to cook until the relish begins to thicken and the sugar begins to caramelize. Add the vinegar, stir in, and remove from the heat. Fold in the chopped parsley and keep warm for service.


Procedure and Presentation:
-Lightly season the steaks with salt and pepper and place them on a pre-heated grill.
-Cook your steaks to desired doneness turning no more than four times to insure you get a good sear on each side.
-Transfer the steaks to heated dinner plates and spoon some of the relish over the top and then crown with blue cheese crumbles and enjoy!

Chef Mark’s Seasoning Ingredients:
1 ½ tablespoons    Good Quality Chili powder
1 tablespoon Good quality smoked paprika
2 tablespoons Sea salt
1 tablespoon Freshly ground black pepper
1 tablespoon Dried Oregano
1 tablespoon Cayenne pepper
1 tablespoon Dried Thyme
1 tablespoon Granulated garlic
1 tablespoon Onion powder
1 teaspoon White pepper

-Mix all ingredients and store in an air tight container. Store unused portion.
-Use on fish, chicken, pork, beef , seafood and burgers!
