Living Well Recipes: Hearty Cheeseburger Soup

A rib-sticking meal for the cold days ahead!
“Hearty Cheeseburger Soup”

1 pound LEAN ground beef. 90/10 lean
1 each Small yellow onion, chopped
1 teaspoon Fresh garlic, minced
1 teaspoon Fresh rosemary
2 each Large garlic cloves, minced
2 tablespoons Worcestershire sauce
2 cups Rich beef stock
2 cups Fresh carrots, diced
2 cups Fresh potatoes, skinned, par boiled and diced in ¼ inch cubes
2 cups Diced tomatoes, canned
24 ounces Melted cheese sauce, prefer Velveeta
Salt and Pepper To Taste

Heat a large pot over medium heat until hot and add ground beef and brown lightly. Quickly add the onion, garlic and rosemary. Cook, stirring frequently, for 3-5 minutes until the beef is fully browned, (cooked) and the onions are tender. Add the beef stock, carrots, potatoes, canned tomatoes, Worcestershire sauce, and cheese sauce and continue cooking over low heat at a simmer for 15-20 minutes until the carrots and potatoes are tender. Adjust seasonings with a pinch of salt and pepper to your liking!
Ladle into heated serving bowls and enjoy!
