Living Well Recipes: Mediterranean Picnic Salad

A flavorful and portable option for busy summer days!
“Mediterranean Pic-Nic Salad”
A delicious and portable way to stay healthy on your summer outings!

Serves 4

Salad Ingredients:
1 head Romaine lettuce, cleaned and chopped
1 each Medium cucumber, peeled and diced
1 each Sweet red, yellow or orange bell pepper, diced
½ pint Cherry tomatoes cut in halves
1 cup Kalamata olives, but them pitted
1 each Sweet Italian red onion sweet onion, very thinly sliced
1 cup Baby spinach
1 cup Artichoke hearts, quartered
1 cup Crumbled feta cheese
1 cup Prosciutto ham cut julienne style, optional
½ cup Edible flower petals, optional

Salad Preparation:
In a plastic 32 ounce container with a lid simply layer your ingredients as follows;
1. Romaine lettuce
2. Sweet red pepper
3. Cucumber
4. Artichoke hearts
5. Red onion
6. Baby spinach
7. Feta cheese
8. Tomatoes
9. Edible flower petals, optional
10. Parma or Prosciutto ham

Place the lid on top. You are now ready for the Pic-Nic! Just store in the cooler or may be placed in the refrigerator and keep up to 24 hours.  Make sure the salads are not in direct contact with the ice in the cooler.

Pic-Nic Salad Dressing
2 cloves Fresh garlic, minced
1 teaspoon Dried oregano
1/2 teaspoon Dijon mustard
1/4 cup Good quality red wine vinegar
1 tablespoon Honey
1 teaspoon Course sea salt
½ each Freshly squeezed lemon juice
1/2 teaspoon Freshly ground black pepper
1/2 cup Extra virgin olive oil

For the vinaigrette, in a mason jar add and mix together the garlic, oregano, mustard, honey, vinegar, lemon, salt and pepper. Add the olive oil and shake vigorously for a minute or two to make an emulsion. Set aside for 30 minutes to allow the flavors to blend.

Service:
For service, Remove the lid and pour at least 3 ounces of dressing over the top, replace the lid and let the fun begin!! On the count of three everyone can shake their salad to their hearts content to mix all the ingredients and pour onto their serving plates and enjoy!
