Don's Favorite Potato Topping
This recipe blends the flavors of chive and spearmint in a surprising manner. The basic recipe for four servings:
2 tbsp butter
2 tbsp finely chopped common (onion) chives
2 tbsp finely chopped spearmint
Melt butter. Add chives and mint and mix. Heat the mixture but do not "cook" the herbs. Spoon over boiled new redskin potatoes.
Also works well with any boiled or steamed potatoes or as a topping for baked potatoes.
