Living Well Recipes: Cajun Ribeye with Sweet Onion Relish

"Cajun Spiced Ribeye with Sweet Onion Relish"
By Chef Mark Shoopman of Lutheran Hillside Village.
Serves 4

Ingredients:
4 each 10 ounce Ribeye steaks
As Needed Extra Virgin olive oil
As Desired Chef Mark's Cajun spice blend (recipe follows)
4 ounces Sweet onion relish (recipe follows)


Cajun Spice Blend:
1 tablespoons    Chili powder
1 tablespoon Good quality smoked paprika
1   tablespoons Sea salt
1 tablespoon Freshly ground black pepper
1 tablespoon Dried Oregano
1 tablespoon Cayenne pepper
1 tablespoon Dried Thyme
1 tablespoon Granulated garlic
1 tablespoon Onion powder
1 teaspoon White pepper

-Mix all ingredients and store in an air tight container.


Chef Mark's Sweet Onion Relish:
3 cups Vidalia or other sweet onions, cut in half and sliced thin
1 cups Sweet red peppers, cut in half and sliced thin
cup Extra Virgin olive oil           
cup Honey       
3 tablespoons Brown sugar
cup Cider vinegar
1/2 tablespoon Chef Mark's spice blend

-In a large skillet over high heat saut the onions in the olive oil until they begin to brown. Add the red peppers, salt and pepper and continue to cook stirring constantly until the peppers are soft.

-Reduce heat to medium and add the cider vinegar, honey brown sugar and 1/2 tablespoon of Chef Mark's spice blend. Continue to cook until the relish begins to thicken and the moisture evaporates.  Remove from heat and let rest, keeping warm for service.

Procedure and Presentation:
- In a large cast iron skillet heat enough olive oil just to very lightly coat the bottom. Place over high heat and allow the skillet to get hot enough to where the oil starts to "run". Reduce the heat to medium high.

- Rub the steaks as generously as you wish with Chef Mark's spice blend, (the more the hotter), and carefully place them in the skillet.

- Cook your steaks to desired doneness turning no more than four times to insure you get a good sear with herbs on each side. If you want them blackened then turn no more than twice.

- Transfer the steaks to heated dinner plates and spoon some of the relish over the top, get your favorite ice cold beverage, and enjoy!
