Living Well Recipes: Chicken with Parmesan and Yogurt

A simple and moist recipe to dress up chicken!
Chicken with Parmesan and Yogurt
Yield: 4 portions

4 boneless, skinless chicken breasts
1 tablespoon fresh lemon juice
salt and pepper to taste
1/2 cup plain yogurt
1/4 cup mayonnaise
1/3 cup scallion, sliced
3 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1/4 cup Parmesan cheese, grated

Preheat oven to 350F.
In a baking dish, arrange chicken in a single layer.
Drizzle with lemon juice and then sprinkle with salt and pepper.
Combine yogurt, mayonnaise, scallions, mustard, Worcestershire sauce, thyme, and cayenne pepper in a small bowl, mixing very well.
Spread the mixture over the chicken and bake for 15 minutes.
Sprinkle cheese on chicken.
Finish baking chicken until chicken is cooked (165 degrees) and cheese is brown.
