Living Well Recipes: Roasted Autumn Pear Crumble with Mascarpone Cheese

Chef William celebrates one of the sweet fruits of the Fall season.
“Roasted Autumn Pear Crumble with Mascarpone Cheese”

2 each Ripe Bartlett or Starkrimson Pears
2 tsp. + 2 TBLS. Melted butter
1/2 cup Mascarpone cheese, room temperature
1/4 cup Candied almonds, chopped
1/4 cup Shelled pumpkin seeds
2 tablespoons Light brown sugar
2 tablespoons Old fashioned oats
2 teaspoons Agave
4 teaspoons Maple syrup
Pinch Sea or Kosher salt
¼ cup Prepared caramel sauce

Preheat oven to 375 degrees F.
First cut the pears in half and remove the seeds with a spoon creating a shallow well in the middle of the pear. Next place the pears, cut side up, on a baking sheet and drizzle with 2 teaspoons of the melted butter and the maple syrup. Roast on the upper oven rack until just soft, about 20 minutes. Keep warm for service.
Meanwhile toss together the almonds, pumpkin seeds, brown sugar, oats, salt and remaining butter. Place on a small baking sheet and toast in the oven for 10 minutes.  Remove and keep warm for service.
Whisk the agave and Mascarpone cheese together and place a generous dollop onto the center of your dessert plate and top the cheese with the roasted pear, cut side up, and top with the crumble mixture. Drizzle the whole thing with caramel sauce and ENJOY!!
