Living Well Recipes: Spring Berries Waffle with Chocolate-Maple Syrup

"Spring Berries Waffle with Chocolate-Maple Syrup"
Treat Mom this Mother's Day!

1 package Favorite waffle mix
1 pint Fresh raspberries
1 pint Fresh blackberries
1 pint Fresh blueberries
1 pint Fresh strawberries
1 pint REAL Grade A Maple syrup, do not use imitation
cup Milk chocolate chips, prefer the mini chips because they melt quicker
1 tablespoon Honey, optional
As desired Whipped topping
As desired Chopped pecans, I like candied ones
2 tablespoons Orange zest
Garnish Fresh mint sprigs
A sprinkle Ground cinnamon
cup Real salted butter, cut into small cubes
As needed Spray on oil pan release
As desired Vanilla extract
Preheat the waffle iron according to the manufacturer's directions.
Clean, hull and dry the berries.  Cut the strawberries into slivers or slice if preferred. If the blackberries are large, cut them in half.
Prepare the waffle batter according to the manufacturer's directions, add a little vanilla extract if desired. Set aside.  Zest the oranges and keep the zest chilled.

Warm the maple syrup in a pan over medium heat. Allow to cook until thickened slightly. Lovingly stir in the chocolate chips allowing them to melt and incorporate into the syrup. Add the honey and reduce the heat. Gently swirl in the butter a few cubes at a time and allow it to melt into the syrup.  Keep warm, not real hot, for service.
Spray the waffle iron generously with the pan release spray and ladle enough batter to just cover the grates. Quickly sprinkle with a bit if each of the berries and close the iron and flip over. Set the timer if so equipped, if not cook until the steam stops and waffle is crisp, about 2-3 minutes.
Place the hot waffle onto a heated plate and pipe a dollop of whipped topping directly in the middle of the waffle. Sprinkle with the whipped topping with a little cinnamon and orange zest and garnish with chopped pecans, a fresh strawberry, and a sprig of fresh mint. Drizzle the waffle with the chocolate-maple syrup and enjoy!
Chef Note - Use whatever berries are available to you and substitute your favorites in place of others as desired.
