Living Well Recipes: Summer Vegetable Salad

Celebrating the bounty of summer gardens!
"Summertime Vegetable Salad"

Dressing Ingredients:
4 tablespoons Unseasoned rice vinegar
2 tablespoon Extra virgin olive oil
2 teaspoon Honey
2 teaspoons Sea salt, or more to taste
teaspoon Freshly ground pepper, or more to taste

Vegetable Ingredients:
2 each Medium cucumbers
1 each Sweet red, yellow or orange bell pepper
pound Fresh Asparagus, lightly steamed and chilled
4 each Medium tomatoes, cut into 1/2-inch wedges or cherry tomatoes
1 each Vidalia or other sweet onion, halved and very thinly sliced
1 cup Baby spinach
2 tablespoons Coarsely chopped fresh herbs, such as flat-leaf parsley, chives
1 cup Crumbled feta cheese

Preparation:
1. Whisk vinegar, oil, honey, salt and pepper in a large shallow bowl.
2. Remove alternating stripes of peel from the cucumbers. Slice the cucumbers into quarter inch rounds. Add the cucumber slices, asparagus, bell peppers tomatoes and onion to the dressing and lovingly toss to coat all the vegetables. Allow to chill in the fridge for up to 1 hour. Add the baby spinach and chopped herbs and lovingly toss again.
3. Serve on chilled plates and sprinkle with the Feta cheese. Goes great as a side dish to your favorite cook-out foods!
