Living Well Recipes: Tailgate Burgers with Garlic Mayo

“LIVING WELL Tailgate Burgers with Garlic Mayo”
Tailgating LIVING WELL style!

LIVING WELL Tailgate Burgers Ingredients:
10 each    Toasted, mini hamburger buns, (Many markets sell mini Keiser rolls or use dinner rolls in any flavor you like.
1 pound Ground chuck
1 pound Ground sausage
2 cups Smoked raw bacon, finely chopped
3 tablespoons Brown sugar
2 tablespoons Worcestershire sauce
2 teaspoons Garlic powder
1 teaspoon Chili powder
1 tablespoon Honey
As Desired Ground black pepper
3 tablespoons onion, grated, liquid drained
1 tablespoon Extra virgin olive oil
As Needed Wax paper
As Needed Blue cheese sliced – I you cannot get the sliced variety, use crumbles

Garlic Mayonnaise Ingredients:
2 cups Mayonnaise
½ each Fresh lemon juice
2 tablespoons Fresh garlic, minced
1 tablespoon Freshly ground black pepper       
1 teaspoon Sea Salt – more if desired
½ cup Capers, chopped – may substitute dill pickle
•Mix all ingredients and chill. Adjust seasoning as needed


LIVING WELL Tailgate Burgers Preparation:
Step 1 – In a medium size bowl mix the ground chuck, sausage, bacon, garlic powder, brown sugar, chili powder, black pepper, honey, onion and Worcestershire sauce. Drizzle with some of the extra virgin olive oil. Divide into ten individual patties.  Make a little indention with your pinky in the middle of each burger. This trick will keep them from swelling and maintain their juiciness.  These can be made well in advance and stored in an airtight container stacked between the wax paper.
Step 2 –Over hot coals, grill the burgers on one side and gently flip over and continue cooking to the desired doneness. Top with cheese and allow to melt.
 
LIVING WELL Tailgate Burgers Presentation:
On a large party platter, (preferably one that looks like a football for genuine Tailgate aesthetics), place the mini buns and top LIVING WELL Tailgate Burgers. Top with garlic mayo and serve with your favorite chips or sides.
