Living Well: Zucchini Bruschetta

Chef Charles puts together a simple bruschetta for any kind of holiday party.

Zucchini Bruschetta


1 tbsp olive oil

1 each zucchini, small diced

½ each onion, small diced

4 each garlic cloves, minced

Salt and pepper to taste

Hummus, prepared

1 baguette, sliced ¼ in thick


Heat olive oil in sauté pan. Heat onion and garlic in pan until onion starts to soften. Add zucchini to pan. Heat until zucchini is soft. Remove from heat, season with salt and pepper and refrigerate.

To assemble: toast baguette slices, if desired. Spread hummus on baguette. Top with zucchini mixture.
