Chef Charles shares an alternative to chicken for a busy, weeknight meal.
Turkey Scallopine with Capers and Lemon
Yield: 4 portions

1 turkey breast cut into 1/8 inch thick scallops
Salt and Pepper to taste
Flour as needed for dredging
2 oz butter
4 oz white wine
2 oz lemon juice
3 tbsp capers

Season turkey breasts with salt and pepper and dredge in flour.
Sauté turkey in the butter until golden brown. Remove and hold in a warm place.
Deglaze the pan with the wine, then add the lemon and capers.
Return the turkey to the pan to coat with the sauce and reheat.
