Stu from Epiphany Farms with Lemon Drop Pepper Springroll
Hydrate rice paper. Use warm water, rice wine vinegar & a little sake to wet the paper. Season the papers with salt, pepper and a little sugar. Slice a selection of fresh vegetables, tofu, plus the lemon drop pepper, into little matchsticks. Roll up a small amount of the veggies into a piece of the rice paper and refrigerate. Serve chilled.
