Market to Menu Fried Green Tomatoes

Zack Metzger from Samara Farms with Fried Green Tomatoes  

Slice 6 large green tomatoes into slices.


2 cups cornmeal

1 cup flour

1 teaspoon paprika

Salt and pepper

1 Tablespoon chopped parsley or thyme


Dip the tomato slices one at a time into 1 cup of milk or beer and then coat with the cornmeal mixture.  Heat 1 inch vegetable oil or bacon drippings in a large skillet until hot enough to sizzle a drop of water.  Add as many tomatoes will fit in a single layer and fry until golden and crisp, turning once.  Drain on paper towel and serve immediately with dressing, mayonnaise or remoulade.
