Rita with Sweet Potato Fries
2 pounds of Sweet Potatoes
2 T olive oil
1 tsp salt
1 tsp black pepper
- Cut sweet potatoes into strips (fries), put into large Ziploc bag, add olive oil, salt and pepper, shake until well coated. Put on cookie sheet, lined with parchment paper coated with cooking oil spray. Bake 25-35 minutes until golden brown, turning once during cooking. Serve with dipping sauce.
Dipping sauce - cup sour cream, 2 tsp lime juice, 1 tsp chopped cilantro or parsley, tsp minced garlic, tsp ground cumin, tsp salt - combine all ingredients in a bowl and stir well.
