Banana Walnut Waffles

All you need:

  • 1 ½ cups old fashioned oats
  • 1 cup skim milk
  • 1 ½ tsp vanilla extract
  • 2 large eggs
  • 1 ½ banana
  • 1 tbsp cinnamon
  • 1 tbsp stevia
  • 1 tsp baking powder
  • ½ cup chopped walnuts

All you do:

  1. Mix all ingredients (except walnuts) in blender until combined. Pour batter into bowl and mix walnuts in until dispersed evenly.
  2. Grease waffle iron with cooking spray. Pour about 1 cup batter onto waffle iron. Cook on medium high, a little longer than the waffle iron recommends (makes the waffles a little crispier).

 
Pumpkin Chocolate Chip Waffles

All you need:

  • 1 ½ cup wheat flour
  • 2 tsp pumpkin pie spice
  • 1 ½ tsp baking powder
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 ½ cups skim milk
  • 1 tsp vanilla
  • ½ cup chocolate chips

 
All you do:

  1. Mix dry ingredients (flour, spice, baking powder) in bowl.
  2. Wisk eggs until lightly fluffed then mix in milk, vanilla, and pumpkin.
  3. Add wet ingredients to dry ingredients and mix until just combined. Mix in chocolate chips.
  4. Grease waffle iron with cooking spray. Pour about 1 cup batter onto waffle iron and cook on medium high, a little longer than waffle iron recommends (makes waffles a little crispier).

 
LemonBerry Chia Seed waffles

All you need:

  • ½ cup white flour
  • 1 cups whole wheat flour
  • 2 tsp baking powder
  • 1 ½ tbsp. stevia
  • 2 eggs
  • 1 cups skim milk
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • 2 tbsp chia seeds
  • 1 cup fresh, chopped blackberries

 
All you do:

  1. Mix dry ingredients (flours, stevia, baking powder, chia seeds) in bowl.
  2. Wisk eggs until lightly fluffed then mix in milk, vanilla, and lemon juice.
  3. Add wet ingredients to dry ingredients and mix until just combined. Mix in blackberries if desired or use as garnish on top only.
  4. Grease waffle iron with cooking spray. Pour about 1 cup batter onto waffle iron and cook on medium high, a little longer than waffle iron recommends (makes waffles a little crispier).
