Chocolate Protein Pancake Poppers

All You Need:

  • ½ cup whole wheat flour
  • ¼ cup all-purpose flour
  • ¼ cup Performance Inspired Chocolate Protein Powder
  • ¼ cup unsweetened cocoa powder
  • 2 Tbsp no-calorie sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 Tbsp Smart Balance butter
  • 2/3 cup unsweetened vanilla almond milk
  • ½ cup applesauce
  • ¼ cup egg whites
  • 2 ½ tsp vanilla extract
  • 2 Tbsp mini chocolate chips

All you do:

  1. Preheat oven to 350 degrees F. Spray 24 mini muffin pan with nonstick spray
  2. Combine flour, protein powder, cocoa powder, sweetener, baking powder, baking soda and salt. Mix well.
  3. Melt butter in separate bowl. Add all remaining wet ingredients to butter and mix until smooth.
  4. Add wet ingredients to dry ingredients and mix until uniform.
  5. Add mix to muffin tins and sprinkle with chocolate chips if desired.
  6. Bake for about 10 minutes. Enjoy!
