Kid-friendly snacks with Hy-Vee’s Brooke Bisping

Pizza Popper

Serves: 10 (2 puffs/kid)

Time: 30 minutes

All you need:

  • 1 can of Hy-Vee homestyle biscuits (10 count)
  • Marinara sauce
  • Pepperoni slices
  • Shredded mozzarella cheese

All you do:

  1. Preheat oven to 375°F. Spray pan with cooking spray.
  2. Open can of biscuits and separate. Cut each biscuit in half. Pres each half into a circle.
  3. Place a small drop of marinara sauce, 1 pepperoni slice, and a bit of shredded mozzarella cheese in the center of each biscuit round.
  4. Bring the edges up and over, pressing them together so that there are no holes. Lay the pizza popper on the prepared baking sheet.
  5. Bake for 15-20 minutes, until lightly browned.

Baked Chicken Nuggets

All you need:

  • 1 pound chicken breast, chunked
  • 1 cup whole wheat bread crumbs
  • 1/4 cup parmesan
  • 1/4 cup Italian seasoning
  • 1/2 cup Jaymo’s Sauce
  • 1/2 cup olive oil smart butter (melted)

All you do:

  1. Preheat oven to 400 degrees F.
  2. Mix breadcrumbs, parmesan, and Italian seasoning together in medium sized bowl.
  3. Mix Jaymo’s sauce and smart butter in separate bowl.
  4. Dip chunked chicken breast into liquid mixtures, then coat chicken with breadcrumb mixture.
  5. Bake in oven at for 25 minutes.
