West African Peanut Soup

All you need:

  • 6 cups low sodium vegetable broth
  • 1 cup red onion chopped
  • 2 tablespoons minced ginger
  • 2 tsp minced garlic
  • 4 cups chopped kale
  • ¾ cup unsalted peanut butter
  • ½ cup tomato paste
  • Sriracha to taste

Optional sides/toppings

  • ¼ cup chopped peanuts
  • 1 can garbanzo beans
  • Brown rice

All you do:

  1. Bring broth to boil in medium sized pot. Add onion, ginger, and garlic then cook over medium low heat for 15 minutes.
  2. In heat safe bowl, mix peanut butter and tomato paste. Once broth has simmered, add 1-2 cups of stock to peanut butter mixture and wisk until smooth.
  3. Pour peanut and stock mixture back into pot and mix until combined. Stir in kale. Add sriracha and garbanzo beans (if desired).
  4. Simmer for 15 min, stirring often. Serve over brown rice and sprinkle with chopped peanuts if desired!
