Chef Mark's Summertime Salsa

Chef Mark Shoopman prepares his Summertime Salsa... with peaches, tomatillos, and onions... YUM!

Here's the recipe:

Summertime Peach, Tomatillo and Onion Salsa

Tomato-Peach and Onion Salsa Ingredients:

2 cups                                   Fresh peaches, finely diced

1 cup                                     fresh tomatollos, finely diced

½ cup                                    Sweet red pepper, finely diced

½ cup                                    Red onion, finely diced

1 tablespoon                      Jalapeno pepper, seeded and finely diced, (more or less to taste)

¼ cup                                    Cilantro, chopped

2 tablespoons                    Olive oil

1 tablespoon                      fresh garlic, minced

1-1/2 tablespoon             Honey

¼ cup                                    Rice wine vinegar

1 Each                                   Fresh Lime, hand squeezed

Pinch                                     Kosher salt and freshly ground black pepper

Step 1 – Combine the peaches, tomatatillos, onion, jalapeno and cilantro in a non-metallic bowl and set aside.

Step 2 – Whisk together the honey, rice wine vinegar and cilantro and toss with together with other ingredients and squeeze the juice of the fresh lime over the salsa. Cover and chill until ready to use.

Serve with chips or over grilled chicken, fish, seafood or pork.
