Kurt Pegler’s Super Soup recipe: Stuffed Green Pepper Soup

STUFFED GREEN PEPPER SOUP
1 or 2 lbs lean ground beef (sometimes I use ground sirloin)
1 onion (chopped)
Brown the meat and onion together, drain the fat. Add it to these ingredients:
1 28 oz can diced tomatoes
1 28 oz can tomoato sauce
1/4 cup brown sugar
2-3 beef bouillon cubes
2 or 3 green peppers (chopped)
2 cups water
Simmer until peppers are tender (20-25 minutes). While it simmers, make 2 cups converted rice and add to the soup. The soup is always better the day after it’s made. It will thicken, so you may need to add some more water to reheat. ENJOY!)
